Ingredients

Chicken

  • 1.5 lb boneless, skinless chicken breasts (about 2 large, patted dry)
  • 1 tbsp olive oil (for sautéing)
  • 2 large eggs
  • 1 clove garlic (minced)
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 1 cup grated Parmesan cheese
  • 3 tbsp all-purpose flour
  • 8 tbsp unsalted butter (1 stick)
  • 2 cloves garlic (minced)
  • 0.25 cup fresh lemon juice
  • 0.25 cup chicken broth

Garnish

  • Optional fresh parsley and lemon slices (for garnish)

Instructions 

  • Cut chicken breasts in half lengthwise, pound to even thickness.
  • Whisk eggs with garlic, Italian seasoning, salt, and pepper. Dredge chicken in egg mixture, then coat with Parmesan and flour.
  • Heat olive oil in a skillet and cook chicken 4-5 minutes per side until golden and cooked through.
  • Melt butter in a separate pan, cook garlic until fragrant, then stir in lemon juice, chicken broth, and pepper. Simmer 2-3 minutes.
  • Pour sauce over chicken or coat chicken in sauce before serving. Garnish with parsley and lemon slices if desired.
