Easy Peanut Butter Pancakes

Delicious and fluffy pancakes infused with creamy peanut butter, perfect for breakfast or dessert.

Ingredients

Baking Mix

  • 1 cup baking mix
  • 1 cup milk
  • 0.5 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  • Mix 1/4 cup of milk with peanut butter in a microwave-safe bowl. Microwave 30 seconds, then stir until smooth.
  • Combine remaining ingredients in a medium bowl and stir until combined.
  • Stir in peanut butter mixture until smooth.
  • Heat a griddle or non-stick pan over medium heat.
  • Use 1/3 cup to scoop batter onto the griddle. Cook 3-5 minutes until bubbles form, then flip and cook another 3-5 minutes until golden brown.
  • Serve with maple syrup or chocolate syrup.

Notes

For extra flavor, add a handful of chocolate chips or sliced bananas.
