Enjoy fluffy, flavorful pumpkin pancakes perfect for a cozy breakfast or brunch.

Ingredients

Dry ingredients

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt

Wet ingredients

  • 1/2 cup pumpkin purée
  • 3/4 cup milk
  • 1 egg egg
  • 2 tbsp melted butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

For cooking

  • Butter and oil (for frying)

Instructions 

  • Mix dry ingredients in a bowl. Whisk wet ingredients in a separate bowl.
  • Combine wet and dry ingredients gently; let batter thicken.
  • Preheat pan and add butter/oil. Pour ¼ cup batter for each pancake.
  • Cook until bubbles form, then flip and cook 1 minute more.
  • Repeat with remaining batter. Serve warm with toppings.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the batter.
