Ingredients

Dry ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons pumpkin pie spice

Wet ingredients

  • 1 cup whole milk ((low-fat or non-dairy works too))
  • 1/3 cup canned pumpkin purée ((Libby's))
  • 2 tablespoons melted butter
  • 1 large egg (room temperature)

Instructions 

  • Whisk dry ingredients together in a large bowl.
  • Mix milk, pumpkin, butter, and egg in a medium bowl.
  • Combine wet and dry ingredients; let sit for 15 minutes.
  • Pour 1/4 cup batter onto a heated, greased griddle; cook 3 minutes per side.

Notes

Do not over-mix the batter for fluffy pancakes.
