Ingredients

Protein

  • 1.5 pounds boneless skinless chicken thighs

Sauces & Condiments

  • 0.5 cup soy sauce (low-sodium works great)
  • 0.25 cup honey (or brown sugar)
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch

Grains

  • 2 cups white or brown rice

Vegetables

  • 2 cups broccoli florets
  • 1 cup carrot ribbons or matchsticks
  • 4 stalks green onions (thinly sliced)
  • 2 tablespoons sesame seeds (toasted)

Instructions 

  • Cook rice according to package instructions and set aside.
  • Mix soy sauce, honey, garlic, ginger, rice vinegar, and cornstarch to make the sauce.
  • Cook chicken thighs in a skillet until browned and cooked through, then add sauce and simmer until thickened.
  • Steam broccoli and carrots until tender.
  • Assemble bowls with rice, chicken, vegetables, green onions, and sesame seeds. Serve immediately.

Notes

For extra flavor, marinate the chicken in some of the sauce before cooking.
