A quick and nutritious vegan dish combining rice and chickpeas, perfect for a wholesome dinner.

Ingredients

  • 200 g white rice
  • 400 g can chickpeas, rinsed and drained
  • 1 red onion red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 0.5 tsp turmeric

  • for garnish Fresh parsley chopped parsley (for garnish)

Instructions 

  • Cook the rice according to package directions.
  • Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Add minced garlic, cumin, and turmeric; cook for 1 minute until fragrant.
  • Stir in chickpeas and cook for 5-7 minutes until heated through. Garnish with parsley before serving.

Notes

Feel free to add a squeeze of lemon or chili flakes for extra flavor.
