Ingredients

Spice Mix

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried herbs (optional)

Main

  • 1.5 kg whole chicken (preferably organic)
  • 2 tablespoons olive oil or butter
  • 1 lemon lemon halves (for stuffing)
  • 3 cloves garlic cloves (for stuffing)
  • a handful fresh herbs (such as rosemary or thyme, for stuffing)

Instructions 

  • Preheat oven to 425°F (220°C). Pat chicken dry.
  • Mix salt, pepper, garlic powder, onion powder, paprika, and herbs. Rub chicken with oil and season generously.
  • Stuff cavity with lemon halves, garlic, and herbs. Place on a roasting rack or skillet.
  • Roast for 75 minutes until internal temperature reaches 165°F (74°C).
  • Rest for 10–15 minutes before carving and serving.
