A quick and flavorful Thai-inspired dish featuring tender chicken, colorful vegetables, and a creamy peanut sauce served over noodles.

Ingredients

Protein

  • 1 lb chicken thighs or breasts

Vegetables

  • 2–3 pieces bell peppers
  • 1 cup snap peas
  • 1 cup carrots
  • 1 cup broccoli

Noodles

  • 8 oz wide or medium flat rice noodles

Sauce and flavorings

  • 1/3 cup creamy peanut butter
  • 2–3 tbsp soy sauce
  • 1 tbsp brown sugar or honey
  • 1–2 tsp chili garlic sauce or sriracha
  • 1 tsp grated ginger
  • 1–2 cloves garlic (minced)
  • Juice of 1/2 lime lime juice
  • 1/2 to 3/4 cup coconut milk or water

Cooking oil

  • 1–2 tbsp neutral high-heat oil (like avocado or canola)

Garnishes

  • Lime wedges (for garnish)
  • Chopped peanuts (for garnish)
  • Cilantro (for garnish)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions 

  • Soak noodles in hot water for 10–12 minutes, drain.
  • Whisk peanut butter, soy sauce, sugar, chili sauce, ginger, garlic, lime juice, and coconut milk to make sauce.
  • Cook chicken in oil until browned and cooked through, about 4–6 minutes. Remove from pan.
  • Stir-fry vegetables in pan for 3–4 minutes, then add chicken and sauce. Toss to coat.
  • Add noodles, stir for 1–2 minutes, squeeze lime, then garnish and serve.

Notes

Adjust spice level with chili sauce and add more coconut milk if needed for creaminess.
