A quick and flavorful Thai-inspired dish featuring tender chicken, colorful vegetables, and a creamy peanut sauce served over noodles.

Instructions
Soak noodles in hot water for 10–12 minutes, drain.
Whisk peanut butter, soy sauce, sugar, chili sauce, ginger, garlic, lime juice, and coconut milk to make sauce.
Cook chicken in oil until browned and cooked through, about 4–6 minutes. Remove from pan.
Stir-fry vegetables in pan for 3–4 minutes, then add chicken and sauce. Toss to coat.
Add noodles, stir for 1–2 minutes, squeeze lime, then garnish and serve.
Notes
Adjust spice level with chili sauce and add more coconut milk if needed for creaminess.
