A quick and flavorful Mexican-inspired dish featuring seasoned turkey and colorful peppers, perfect for a satisfying meal.

Ingredients

Tortillas

  • 12 medium tortillas
  • 1 tablespoon olive oil
  • 600 g turkey breast fillets ((cut into thin strips or use leftover cooked turkey))
  • 3 peppers peppers (sliced thinly (ideally 1 red, 1 yellow, 1 green))
  • 2 medium onions (sliced thinly)
  • Fresh coriander (for garnish)
  • Salsa, sour cream, guacamole, refried beans etc. extras for serving
  • 2 teaspoons ground cumin
  • 1 teaspoon dried chilli flakes (more if you like things hot)
  • 3 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 lime juice of lime
  • 2 cloves garlic (grated or crushed)
  • Salt and pepper to taste

Instructions 

  • Preheat oven to 200°C (180°C fan) / 400°F. Wrap tortillas in foil and warm in oven for 10 minutes.
  • Mix cumin, chilli flakes, paprika, oregano, lime juice, garlic, salt, and pepper to make seasoning.
  • Heat olive oil in a pan, cook turkey until browned (~4-5 min), then set aside.
  • Stir fry peppers and onions until browned, then add seasoning and cooked turkey, stir for 1 min.
  • Serve in warm tortillas, garnished with coriander and sides like salsa and sour cream.

Notes

Use leftover cooked turkey for quicker preparation.
