A quick and flavorful Mexican-inspired dish featuring seasoned turkey and colorful peppers, perfect for a satisfying meal.
Ingredients

(sliced thinly (ideally 1 red, 1 yellow, 1 green))

Salsa, sour cream, guacamole, refried beans etc.

(more if you like things hot)

Instructions
Preheat oven to 200°C (180°C fan) / 400°F. Wrap tortillas in foil and warm in oven for 10 minutes.
Mix cumin, chilli flakes, paprika, oregano, lime juice, garlic, salt, and pepper to make seasoning.
Heat olive oil in a pan, cook turkey until browned (~4-5 min), then set aside.
Stir fry peppers and onions until browned, then add seasoning and cooked turkey, stir for 1 min.
Serve in warm tortillas, garnished with coriander and sides like salsa and sour cream.
Notes
Use leftover cooked turkey for quicker preparation.
