Delicious crispy nachos topped with seasoned chicken or steak, colorful peppers, and melted cheese, perfect for sharing.

Ingredients

Protein

  • 3-4 pieces boneless, skinless chicken breasts (or substitute for steak) (about 1-1½ pounds)
  • 2 tablespoons fajita seasoning
  • 3 tablespoons avocado oil, divided
  • 3 pieces bell peppers (variety of colors, cut into strips)
  • 1 piece onion (halved and thinly sliced)
  • 1 teaspoon dried oregano
  • 1 piece lime (for juice)
  • 1 13-ounce bag tortilla chips (thicker sturdy chips work best)
  • 3-4 cups shredded cheese (mix of Monterey Jack, cheddar, mozzarella)

Serve with

  • salsa or pico de gallo
  • guacamole
  • sour cream
  • lime wedges (on the side)

Instructions 

  • Rub the rest of the fajita seasoning on the chicken or steak. Sear in hot oil until cooked through, then set aside.
  • Sauté peppers and onion in remaining oil until tender and slightly charred. Stir in a teaspoon of fajita seasoning and oregano.
  • Preheat oven to 400°F (200°C). Layer half the chips on a baking sheet, sprinkle with cheese, then add remaining chips and cheese. Bake until cheese melts and chips are crispy, about 10 minutes.
  • Slice cooked chicken or steak and squeeze lime juice over. Top the baked chips with fajita veggies and meat. Serve immediately with sides.

Notes

For extra flavor, add chopped cilantro or jalapeños as desired.
