Farro with Mushrooms & Parmesan

A hearty and flavorful dish combining nutty farro with savory mushrooms and fresh herbs, finished with Parmesan cheese.

Ingredients

Dry grains

  • 1 1/2 cups dry pearled farro (or about 4 cups cooked)
  • 1 yellow onion yellow onion
  • 2 garlic cloves garlic cloves
  • 8 ounces mixed mushrooms (such as baby portobello, shiitake, and oyster)
  • 1/4 cup finely chopped fresh thyme and oregano (loosely packed)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 cup Parmesan or Pecorino Romano cheese
  • to taste Kosher salt and fresh ground pepper

Instructions 

  • Cook the farro: In a saucepan, boil 4 1/2 cups water with 1/2 tsp salt. Add farro and simmer until tender, 15-20 min.
  • Prep vegetables: Mince onion and garlic. Slice mushrooms. Chop herbs.
  • Heat olive oil in a skillet. Sauté onion 5 min, add mushrooms and cook 2 min. Add garlic, herbs, salt, cook 2 min.
  • Stir in cooked farro and lemon juice. Heat through for 2 min.
  • Mix in cheese and pepper. Serve immediately.

Notes

Leftovers can be refrigerated for up to 4 days.
