A refreshing and vibrant salad combining sweet oranges, crunchy fennel, and fresh herbs, perfect for a light appetizer or side dish.

Ingredients

Fruits

  • 2 medium blood oranges or navel oranges (peeled and segmented)

Vegetables

  • 1 large fennel bulb (halved, cored, very thinly sliced)
  • 1 medium red onion (very thinly sliced)

Herbs

  • 16 leaves mint leaves (torn)

Oils & Seasonings

  • 3 Tbsp extra-virgin olive oil
  • to taste Kosher salt, freshly ground pepper

Olives

  • 20 black olives oil-cured black olives

Instructions 

  • Cut away peel and pith from oranges; segment and set aside.
  • Combine orange segments, fennel, red onion, mint, and olive oil; toss well.
  • Season with salt and pepper to taste.
  • Transfer to a platter and scatter olives over the top.

Notes

Use fresh herbs and ripe oranges for the best flavor.
