A quick and healthy one-pan meal packed with tender chicken and colorful vegetables, perfect for a satisfying dinner.

Ingredients

Chicken

  • 2 lbs boneless, skinless chicken breasts or thighs, 1-inch pieces
  • 1 tbsp olive oil (for chicken)
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp black pepper
  • 0.5 tsp salt

Vegetables

  • 1 tbsp olive oil (for veggies)
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper 1-inch pieces
  • 1 yellow bell pepper 1-inch pieces
  • 1 head broccoli, small florets (approx. 3 cups)
  • 1 cup sliced mushrooms (cremini or white button)
  • 1 cup green beans, trimmed
  • 0.5 cup corn kernels (fresh or frozen)
  • 0.5 cup zucchini or yellow squash, ½-inch half-moons

Sauce

  • 1 cup low-sodium chicken broth
  • 2 tbsp soy sauce (or tamari for GF)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 0.5 tsp red pepper flakes (optional)
  • 2 tsp cornstarch
  • 2 tbsp cold water (for slurry)

Instructions 

  • Cut chicken into 1-inch pieces; toss with olive oil and spices. Sear in a skillet until cooked through, then set aside.
  • Chop onion, mince garlic, and prepare peppers, broccoli, mushrooms, green beans, corn, and zucchini.
  • Whisk chicken broth, soy sauce, Worcestershire, Italian seasoning, and red pepper flakes; prepare cornstarch slurry.
  • Sauté onion and garlic, then add peppers; cook until tender-crisp. Add remaining vegetables and cook until tender.
  • Pour sauce over vegetables, add slurry, and simmer until thickened. Return chicken to skillet, stir to coat, and heat through.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lemon before serving.
