Ingredients

Dough

  • 0.25 cup all-purpose flour
  • 4 tbsp all-purpose flour
  • 0.25 cup water
  • 4 tbsp water
  • 0.5 cup milk
  • 2 tbsp active dry yeast
  • 1 cup warm milk (100-110°F)
  • 0.5 cup granulated sugar
  • 1 tsp salt
  • 2.5 cups all-purpose flour
  • 2.5 cups bread flour
  • 1 tsp powdered milk
  • 2 large eggs
  • 0.5 cup unsalted butter (room temperature)
  • 1 large egg (for brushing)
  • 2 tbsp unsalted butter (melted)
  • 1 clove garlic (finely minced or grated)
  • 1 tbsp chopped fresh parsley

Finishing

  • to taste flaky salt (for finishing)

Instructions 

  • Activate yeast in warm milk with a pinch of sugar, let sit until frothy.
  • Mix flours, sugar, salt, and powdered milk; add activated yeast mixture, eggs, and melted butter. Knead until smooth.
  • Let dough rise in a warm place until doubled in size, about 1 hour.
  • Divide dough into equal portions, shape into buns, and place on a baking sheet. Let rise for 30 minutes.
  • Brush with beaten egg, sprinkle with garlic, parsley, and flaky salt. Bake at 375°F (190°C) for 15 minutes until golden.

Notes

For extra flavor, brush with garlic butter after baking.
