A vibrant and fresh salad combining creamy burrata, ripe tomatoes, fragrant basil, and a balsamic glaze for a perfect light appetizer or side dish.

Ingredients

Dairy

  • 8 oz fresh burrata cheese
  • 2 cups cherry tomatoes, halved
  • 1 cup mixed heirloom tomatoes, sliced
  • 0.25 cup fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • to taste Salt and freshly ground black pepper
  • 0.25 cup toasted pine nuts (optional)

Instructions 

  • Halve cherry tomatoes and slice larger heirloom tomatoes.
  • Arrange tomatoes on a platter, alternating types for color.
  • Tear or cut burrata into bite-sized pieces and distribute over tomatoes.
  • Scatter basil leaves, drizzle olive oil and balsamic vinegar, then season with salt and pepper.
  • Optional: sprinkle toasted pine nuts on top.
  • Serve immediately as a fresh appetizer or side dish.
