Deliciously spiced fried shrimp with a homemade jerk dressing sauce.

Ingredients

Seafood

  • 16 oz raw easy peel deveined tail-on shrimp - Black Tiger ((super colossal size))
  • 2 tbsp jerk seasoning ((homemade or store-bought))
  • 1 tsp salt ((I used kosher salt))
  • 2 tbsp unsalted butter
  • 1 tbsp jerk seasoning
  • ¼ cup water
  • 2 sprigs thyme
  • 1 tsp olive oil
  • ½ tsp salt
  • ½ tsp paprika

Instructions

  • Peel, devein, wash and pat dry the shrimp.
  • In a bowl, combine shrimp, jerk seasoning, baking soda, and salt. Let marinate for 15–20 minutes.
  • Heat oil to 350°F and fry shrimp in batches for 3-6 minutes until golden.
  • Melt butter and combine with jerk seasoning, water, thyme, salt, and paprika. Simmer for 3-5 minutes.
  • Drizzle sauce over shrimp or serve on the side.

Notes

For extra flavor, let the shrimp marinate longer if time allows.
