A vibrant and healthy salad combining cooked brown rice with dried fruits, nuts, and fresh herbs, dressed in a tangy vinaigrette.

Ingredients

Dry ingredients

  • 1 cup dry brown rice
  • 0.5 cup dried fruit (cranberries and blueberries) (ΒΌ cup each)
  • 0.33 cup chopped pecans
  • 0.33 cup chopped walnuts
  • 0.25 cup finely chopped chives
  • 0.25 cup finely chopped celery
  • 0.25 cup finely chopped white onion
  • 4 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1 tsp mustard
  • 1 tsp coconut sugar
  • 0.25 tsp sea salt
  • a few grinds black pepper

Instructions 

  • Cook the brown rice according to package instructions.
  • Mix dressing ingredients in a jar, shake well.
  • Combine rice, dried fruits, nuts, and herbs in a bowl.
  • Drain and rinse rice, then add to the bowl.
  • Pour dressing over the mixture, toss well, and serve.

Notes

Feel free to customize with your favorite nuts and dried fruits.
