These rich and moist pumpkin blondies are packed with chocolate chips and warm spices, perfect for a cozy treat.

Ingredients

  • 1 cup butter (2 sticks)
  • 1 tablespoon pumpkin pie spice
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup pumpkin (canned, not pie filling) (about 240 grams)
  • 2 teaspoons vanilla (Mexican vanilla preferred)
  • 1/2 teaspoon kosher salt
  • 1 large egg
  • 2 cups all purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 1 cup semisweet chocolate chips
  • 1 cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment or spray with nonstick spray.
  • Melt butter in a saucepan over medium heat. Add pumpkin spice and toast briefly, then remove from heat.
  • Stir in sugars, then add pumpkin, vanilla, and salt. Mix well. Add egg and stir vigorously.
  • Mix in flour and baking powder until just combined. Fold in chocolate chips.
  • Pour batter into prepared pan, spread evenly, and sprinkle remaining chocolate chips on top. Bake for 25-30 minutes until a toothpick comes out clean.
  • Cool before slicing. Store leftovers in an airtight container for 2-3 days or freeze for up to 3 months.

Notes

Use high-quality vanilla for best flavor. Do not overmix to keep bars tender.
