A flavorful and fresh dish combining creamy whipped feta with grilled chicken and vibrant vegetables, perfect for a light, satisfying meal.

Ingredients

Dairy

  • 7 ounces feta cheese
  • 0.25 cup Greek yogurt

Produce

  • 1 clove garlic (finely chopped)
  • 0.125 cup fresh parsley
  • 0.125 cup fresh dill
  • 2 chicken breasts chicken breasts
  • 4 tablespoons extra-virgin olive oil (divided)
  • 1 lemon juice of 1 lemon (divided)
  • 2 cloves garlic (finely chopped)
  • 0.5 teaspoon dry marjoram
  • 0.5 teaspoon dry thyme
  • 0.5 teaspoon dry oregano
  • 0.5 teaspoon kosher salt (plus extra)
  • 0.25 teaspoon freshly-cracked black pepper (plus extra)

Vegetables

  • 1 red onion red onion (sliced into ¼” discs)
  • 2 heads romaine lettuce (thinly sliced, substitute 1 small head iceberg lettuce)
  • 3 green onions green onions (thinly sliced)
  • 2 Persian cucumbers Persian cucumbers (thinly sliced)
  • 1 pint cherry tomatoes (halved)
  • 0.125 cup fresh dill (roughly chopped)
  • 4 pickled peperoncini peppers pickled peperoncini peppers (optional, substitute pickled hot peppers of choice)

Instructions 

  • Whip feta, Greek yogurt, garlic, herbs, lemon juice, salt, and pepper until smooth.
  • Grill chicken breasts with 2 tbsp olive oil, lemon juice, garlic, and spices until cooked through.
  • Slice grilled chicken and assemble with sliced vegetables and whipped feta.
  • Drizzle with remaining olive oil and lemon juice, then serve.

Notes

For extra flavor, marinate chicken in spices before grilling.
