4tbspunsalted butter
8largegarlic cloves
0.5cupchicken broth
1tbspfresh lemon juice
2tbspfresh parsley
1tspfresh thyme leaves
Instructions
Pat the chicken thighs dry, season with salt, pepper, and paprika, then let sit at room temperature for 10-15 minutes.
Preheat a skillet over medium-high heat, add oil, then cook the chicken skin-side down for 6-8 minutes until golden and crispy. Flip and cook another 5-6 minutes.
Transfer chicken to a plate, reduce heat, drain excess fat, add butter, then garlic, cooking for 60-90 seconds until fragrant.
Deglaze with chicken broth, simmer briefly, then stir in lemon juice, parsley, and thyme. Return chicken to skillet, spoon sauce over, and cook for 4-5 minutes until done.
Optional: broil for 1-2 minutes to re-crisp skin, then rest for a couple of minutes before serving with sauce spooned over.
