Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 1 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 8 large garlic cloves
  • 0.5 cup chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley
  • 1 tsp fresh thyme leaves

Instructions 

  • Pat the chicken thighs dry, season with salt, pepper, and paprika, then let sit at room temperature for 10-15 minutes.
  • Preheat a skillet over medium-high heat, add oil, then cook the chicken skin-side down for 6-8 minutes until golden and crispy. Flip and cook another 5-6 minutes.
  • Transfer chicken to a plate, reduce heat, drain excess fat, add butter, then garlic, cooking for 60-90 seconds until fragrant.
  • Deglaze with chicken broth, simmer briefly, then stir in lemon juice, parsley, and thyme. Return chicken to skillet, spoon sauce over, and cook for 4-5 minutes until done.
  • Optional: broil for 1-2 minutes to re-crisp skin, then rest for a couple of minutes before serving with sauce spooned over.
