1poundribeye steak(cut into 1 inch pieces, trim excess fat)
1teaspoonkosher salt
1teaspoonground black pepper
2teaspoonsextra virgin olive oil
2-3teaspoonsbutter(sub ghee or plant-based butter)
2-3teaspoonsgarlic minced
to tastefresh parsley(roughly chopped)
Instructions
Cut 1 pound of ribeye steak into 1-inch pieces, pat dry, and season with salt and pepper.
Heat a cast iron skillet over medium-high heat, add olive oil, and sear steak on both sides for 30-60 seconds until browned. Remove and set aside.
Add butter and garlic to the skillet, melt, then return steak bites to the pan, tossing to coat and cook to desired doneness (internal temp 130-135°F for medium-rare).
Finish by tossing in chopped parsley and serve with rice and sautéed zucchini.
