Ingredients

Marinade

  • 2 Tbsp olive oil
  • 2 garlic cloves garlic (pressed or minced)
  • 2 Tbsp parsley (finely chopped, plus more to garnish)
  • 2 Tbsp lemon juice (from 1 lemon)
  • 1 Tbsp dijon mustard
  • 1/2 Tbsp sea salt
  • 1/4 tsp black pepper

Chicken

  • 8 pieces chicken thighs (preferably skin-on, boneless)

Brussels Sprouts

  • 1.5 lbs brussels sprouts (trimmed and halved)
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 2 tsp olive oil

Instructions 

  • Mix marinade ingredients and coat chicken; marinate for at least 6 hours or overnight.
  • Prepare Brussels sprouts with salt, pepper, and olive oil; spread on baking sheet.
  • Arrange marinated chicken on the pan and bake at 400°F for 25-30 minutes; broil for 2-4 minutes for crisp skin.

Notes

For extra flavor, garnish with additional chopped parsley before serving.
