Instructions
Preheat oven to 400°F (200°C).
Mix garlic, herbs, olive oil, lemon zest, salt, and pepper to make herb mixture.
Rub herb mixture onto chicken thighs; sear skin-side down in a hot skillet for 5-7 minutes, then flip and sear 3-4 minutes.
Add broth and tomatoes around chicken, then roast in oven for 25-30 minutes.
Rest chicken 5 minutes, garnish with parsley, and serve with broth and tomatoes.
Notes
Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
