Juicy chicken thighs infused with fresh herbs and garlic, roasted to perfection with cherry tomatoes and served with a flavorful broth.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • to taste salt and pepper salt and pepper
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • for garnish fresh parsley fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix garlic, herbs, olive oil, lemon zest, salt, and pepper to make herb mixture.
  • Rub herb mixture onto chicken thighs; sear skin-side down in a hot skillet for 5-7 minutes, then flip and sear 3-4 minutes.
  • Add broth and tomatoes around chicken, then roast in oven for 25-30 minutes.
  • Rest chicken 5 minutes, garnish with parsley, and serve with broth and tomatoes.

Notes

Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
