  • 4 pieces chicken thighs with bone and skin
  • 4-5 cloves garlic cloves, peeled and slightly pressed
  • 1/2 teaspoon dried or fresh sage, chopped
  • 3/4 teaspoon dried or fresh rosemary, chopped
  • 1/4 teaspoon garlic powder
  • to taste Salt and black pepper

Instructions 

  • Preheat oven to 400°F (204°C). Season chicken thighs with salt, pepper, and garlic powder. Place skin side up in a baking pan.
  • Sprinkle chopped sage and rosemary over chicken. Arrange garlic cloves around the thighs.
  • Roast uncovered at 400°F for 45 minutes, then lower temperature to 325°F (163°C) and cook for an additional 10-15 minutes. Ensure internal temperature reaches 165°F (74°C).
  • Turn off oven, cover with foil to keep warm before serving.

Notes

For extra flavor, marinate the chicken with herbs and garlic ahead of time.
