  • 1 large head garlic (for roasting)
  • 1 tsp olive oil
  • 6 tbsp unsalted butter (for browning)
  • 4 tbsp melted butter (for dough)
  • 1 1/4 cups whole milk (warm 105-110°F)
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg
  • 4 cups all-purpose flour
  • 1 1/2 tsp fine sea salt (for dough)
  • 2 tsp fine sea salt (for glaze)
  • 3 tbsp mixed fresh herbs (parsley, chives, thyme, rosemary, finely chopped)
  • 1/4 tsp black pepper

Optional

Instructions 

  • Roast garlic at 400°F (200°C) by slicing off the top, drizzling with oil, wrapping in foil, and baking for 35-40 minutes. Cool and squeeze out cloves.
  • Bloom yeast in warm milk (105-110°F) with sugar for 5-10 minutes. Whisk in egg and melted butter.
  • Mix in flour and salt, knead until smooth and springy (8-10 minutes). Let rise covered for 60 minutes.
  • Brown butter until nutty, mash in roasted garlic, herbs, salt, and pepper. Reserve clear butter for brushing.
  • Divide dough into 20 pieces (~48g each), roll into balls, arrange in a greased 9x13-inch pan, and brush with butter. Proof for 35 minutes.
  • Bake at 375°F (190°C) for 18-22 minutes until deep golden. Immediately spoon garlic-herb butter over and let rest 10 minutes. Sprinkle flaky salt and serve warm.

Notes

For best flavor, use fresh herbs and ensure butter is browned to a nutty aroma.
