  • 5 pieces bone-in chicken thighs
  • 2 pounds creamer potatoes (cut into 1.5 inch chunks)
  • 5 pieces carrots (peeled and chopped)
  • 1 medium onion (roughly chopped)
  • 6 cloves garlic (diced)
  • 3 teaspoons Herbes de Provence
  • 3 tablespoons olive oil
  • 1 whole lemon (sliced)
  • 1.5 teaspoons kosher salt
  • 1 teaspoon pepper

Garnish

  • 4 tablespoons butter
  • 1 clove garlic (minced)
  • 1 teaspoon Herbes de Provence
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix potatoes, carrots, onions, garlic, olive oil, salt, and pepper; cover and bake for 20 minutes.
  • Melt butter with garlic and herbs; pat chicken dry and brush with butter mixture.
  • Place chicken on vegetables, add lemon slices, and bake uncovered for 40-45 minutes until internal temp reaches 164°F.
  • Let rest for 5-10 minutes, then garnish with parsley and serve.

Notes

Ensure chicken skin is crispy by broiling for a few minutes if needed.
