  • 6 pieces bone-in skin-on chicken thighs
  • 1 head garlic, cloves separated and peeled
  • 0.25 cup olive oil
  • 4 sprigs fresh rosemary, leaves stripped
  • 0.25 cup fresh parsley leaves, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  • Preheat oven to 425°F (220°C). Pat chicken dry.
  • Mash 4 garlic cloves with rosemary, parsley, salt, pepper, and 2 tbsp olive oil into a paste. Loosen skin on thighs and rub half underneath, spread remaining over skin. Tuck garlic and rosemary around chicken.
  • Roast in oven for 40-45 minutes until skin is crispy and internal temp reaches 165°F (74°C).
  • Rest 5 minutes before serving for juicy, crispy chicken.

Notes

Ensure skin is dry before roasting for maximum crispiness.
