1headgarlic, cloves separated and peeled
0.25cupolive oil
4sprigsfresh rosemary, leaves stripped
0.25cupfresh parsley leaves, chopped
1teaspoonsalt
0.5teaspoonblack pepper
Instructions
Preheat oven to 425°F (220°C). Pat chicken dry.
Mash 4 garlic cloves with rosemary, parsley, salt, pepper, and 2 tbsp olive oil into a paste. Loosen skin on thighs and rub half underneath, spread remaining over skin. Tuck garlic and rosemary around chicken.
Roast in oven for 40-45 minutes until skin is crispy and internal temp reaches 165°F (74°C).
Rest 5 minutes before serving for juicy, crispy chicken.
