Ingredients

Marinade

  • 0.5 cup olive oil
  • 2 teaspoons minced garlic
  • 1 shallot shallot (minced)
  • 1.5 tablespoons apple cider vinegar
  • 2 teaspoons honey mustard
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon lemon zest
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon coarse black pepper
  • 2.5 pounds lamb chops
  • 1 tablespoon vegetable oil

Instructions 

  • Whisk olive oil, garlic, shallot, vinegar, mustard, herbs, lemon zest, salt, and pepper. Set aside 1/4 cup for later.
  • Marinate lamb chops in remaining mixture for 2-6 hours, then drain.
  • Pat dry, season with salt and pepper, then cook in hot oil 3-4 minutes per side until desired doneness.
  • Rest for 5 minutes, then serve with reserved marinade.
