Instructions
Season chicken with Italian seasoning, smoked paprika, salt, and black pepper.
Heat 1 tablespoon olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 6-8 minutes per side.
Remove chicken and in the same skillet, add 3 tablespoons olive oil and halved potatoes. Cook until crispy and tender, about 15-20 minutes.
Add minced garlic to potatoes and cook for 1 minute. Return chicken to skillet, sprinkle with Parmesan cheese and parsley, then serve.
Notes
For extra flavor, sprinkle additional Parmesan and parsley before serving.
