Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 0.5 teaspoon ground black pepper

Dairy & Fats

  • 2 tablespoons unsalted butter
  • 1 large yellow onion (finely diced (about 1 cup))
  • 1 tablespoon garlic (minced)

Grains

  • 1.5 cups uncooked long-grain white rice

Broth & Liquids

  • 3 cups chicken broth
  • 0.5 cup parmesan cheese (grated, plus extra for garnish)
  • 0.5 cup heavy whipping cream

Garnish

  • fresh parsley (for garnish)

Instructions 

  • Season chicken with paprika, garlic salt, and pepper.
  • Melt butter in a large pot over medium heat; cook onion until softened.
  • Add chicken and cook until golden; stir in garlic, then add rice and broth. Bring to boil, then simmer covered for 15-20 minutes.
  • Remove from heat, stir in Parmesan and cream until creamy. Garnish with parsley and extra Parmesan. Serve immediately.

Notes

Ensure rice is tender and liquid is absorbed before serving for best results.
