Ingredients

Protein

  • 1.25 lb chicken breasts or thighs (cubed)
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 to 2 tsp lemon pepper seasoning (no salt added)
  • 0.5 tsp salt
  • 0.25 cup lemon juice
  • 4 to 6 Tbsp butter
  • 3 cloves garlic (minced)
  • 0.25 cup parmesan cheese (grated)
  • 2 tsp lemon juice (optional)
  • 3 Tbsp fresh parsley or cilantro (chopped)
  • 1 small lemon (sliced for garnish, optional)

Instructions 

  • Marinate chicken with lemon juice, garlic, paprika, onion powder, lemon pepper, and salt.
  • Thread chicken onto skewers.
  • Cook in pressure cooker on high for 10-12 minutes.
  • Remove skewers and toss with melted butter, Parmesan, and chopped herbs.
  • Garnish with lemon slices and serve.

Notes

Use fresh herbs for best flavor and adjust lemon juice for desired tanginess.
