Enjoy these healthy, gluten-free banana oat waffles perfect for a quick breakfast or brunch. They are easy to make and customizable with your favorite toppings.
Ingredients
Oats
2cupsold-fashioned rolled oats(gluten free as needed)
1cupunsweetened vanilla almond milk(or other milk)
1.5teaspoonspure vanilla extract
2largeeggs
1mediumripe banana
1teaspooncinnamon
1teaspoonbaking powder
1packetstevia or other preferred sweetener(optional)
Optional toppings
almond/peanut butter, coconut butter, coconut oil, honey, maple syrup, fresh fruit
Instructions
Preheat waffle iron and spray with cooking spray.
Blend all ingredients until smooth. Let sit 5-10 minutes if batter is thin.
Pour 3/4 cup batter onto waffle iron and cook until crispy.
Repeat with remaining batter. Makes about 4 waffles. Serve with toppings.
Notes
For extra flavor, add a dash of nutmeg or top with your favorite fresh fruit.
