Enjoy these healthy, gluten-free banana oat waffles perfect for a quick breakfast or brunch. They are easy to make and customizable with your favorite toppings.

Ingredients

Oats

  • 2 cups old-fashioned rolled oats (gluten free as needed)
  • 1 cup unsweetened vanilla almond milk (or other milk)
  • 1.5 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 medium ripe banana
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 packet stevia or other preferred sweetener (optional)

Optional toppings

  • almond/peanut butter, coconut butter, coconut oil, honey, maple syrup, fresh fruit

Instructions 

  • Preheat waffle iron and spray with cooking spray.
  • Blend all ingredients until smooth. Let sit 5-10 minutes if batter is thin.
  • Pour 3/4 cup batter onto waffle iron and cook until crispy.
  • Repeat with remaining batter. Makes about 4 waffles. Serve with toppings.

Notes

For extra flavor, add a dash of nutmeg or top with your favorite fresh fruit.
