Ingredients

Dough

  • 1 cup unsalted butter (softened or dairy-free substitute)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips (or dairy-free chips)

Instructions 

  • Beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time and vanilla, mixing well after each addition.
  • Whisk together gluten-free flour, baking soda, baking powder, and salt in a separate bowl.
  • Gradually mix dry ingredients into wet, then fold in chocolate chips.
  • Chill dough for 30 minutes, then scoop onto baking sheets and bake at 350°F (175°C) for 10–12 minutes.
  • Cool cookies on a wire rack before serving.

Notes

For best results, refrigerate the dough before baking to prevent spreading.
