Instructions
Bake potatoes at 200°C until tender, then cool and mash.
Mix mashed potatoes with flour, ricotta, Parmesan, egg, salt, and pepper to form a dough.
Shape dough into ropes, cut into bite-sized pieces, then boil until tender, about 4-6 minutes.
Fry gnocchi in olive oil until golden, then set aside.
Cook butter until light brown, add sage and garlic, then toss with gnocchi, lemon zest, and juice. Serve topped with Parmesan.
Notes
Ensure not to burn the sage for optimal flavor.
