A hearty and comforting baked chicken dish with vegetables, perfect for family dinners.

Ingredients

Main

  • 8 pieces chicken legs
  • 5 large white potatoes
  • 1 package baby carrots (8 ounces)
  • 5 cloves garlic
  • 2 yellow squash yellow squash (quartered lengthwise and sliced)
  • 1 large onion (peeled and sliced)
  • 1 tablespoon dried parsley flakes
  • 0.5 tablespoon garlic powder
  • to taste salt salt
  • to taste black pepper black pepper
  • 4 tablespoons butter (divided)
  • 2 cups water (or as needed)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Arrange chicken, potatoes, carrots, garlic, squash, and onion in a baking dish. Season with parsley, garlic powder, salt, and pepper. Dot with butter and add water.
  • Cover with foil and bake for 1 hour. Remove foil and bake 20 more minutes until cooked through.

Notes

Ensure chicken is cooked to an internal temperature of 165°F (74°C).
