A quick and flavorful one-pot dish combining tender chicken, fresh vegetables, and zesty lemon rice inspired by Greek flavors.

Ingredients

Protein

  • 1.5 lb skinless boneless chicken thighs
  • 2 tablespoons olive oil

Vegetables & Herbs

  • 8 oz grape tomatoes (sliced in half)
  • 5 cloves garlic (minced)
  • 5 oz fresh spinach (chopped)
  • 3 tablespoons freshly squeezed lemon juice

Grains & Legumes

  • 2 cups cooked jasmine rice
  • 15 oz canned chickpeas

Dairy & Cheese

  • 6 oz feta cheese (diced into small cubes)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice

Herbs & Seasonings

  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh oregano (optional)

Instructions 

  • Season chicken with oregano, paprika, salt, and red pepper flakes.
  • Heat olive oil in a large pot and cook chicken until browned, about 8 minutes.
  • Add garlic, tomatoes, spinach, chickpeas, and lemon juice; cook for 5 minutes.
  • Stir in cooked rice and feta cheese; cook until heated through, about 5 minutes.
  • Garnish with chopped fresh oregano and serve hot.

Notes

For extra flavor, add a squeeze of lemon before serving.
