Ingredients

Marinade

  • 0.5 cup plain Greek yogurt
  • 3 cloves garlic, finely minced or grated
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey
  • 1.5 tablespoons lemon juice (from ½ lemon)
  • 1.5 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon dried rosemary
  • 1.5 to 2 pounds boneless skinless chicken breasts or thighs, cut into 1½-inch chunks (about 680-907 grams)

Tzatziki sauce

  • Tzatziki sauce (optional, for serving)

Garnish

  • Fresh herbs for garnish: dill, parsley, or mint

Skewers

  • Wooden skewers (if using, soak in water for at least 30 minutes before cooking)

Instructions 

  • Whisk together yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary.
  • Add chicken to marinade, cover, and refrigerate for 30 minutes to 8 hours.
  • If using wooden skewers, soak them in water for 30 minutes.
  • Thread chicken onto skewers and grill for 3–4 minutes per side until cooked through.
  • Serve with tzatziki, herbs, and lemon wedges.

Notes

Marinate the chicken for at least 30 minutes for best flavor.
