Ingredients

Meat

  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Zest of 1 lemon lemon zest

Instructions 

  • Mix olive oil, lemon juice, oregano, garlic powder, salt, black pepper, and red pepper flakes. Marinate chicken for 30 minutes.
  • Cook rice in chicken broth with butter until tender, then stir in lemon zest.
  • Thread chicken onto skewers and grill for 10-12 minutes until cooked and charred.
  • Serve skewers over lemon rice, garnished with chopped parsley.

Notes

Marinate the chicken for at least 30 minutes for best flavor.
