Ingredients

Protein

  • 8 pieces bone-in chicken thighs
  • 0.33 cup extra-virgin olive oil
  • 0.25 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions 

  • Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
  • Marinate chicken thighs in the mixture for 1-8 hours in the fridge.
  • Preheat oven to 350°F (180°C). Place chicken in a baking dish and pour remaining marinade on top.
  • Bake for 40-45 minutes until fully cooked and skin is crispy. Baste occasionally and broil last 2-3 minutes for extra crisp.
  • Garnish with lemon slices if desired before serving.

Notes

For extra flavor, marinate longer and serve with fresh lemon slices.
