Instructions
Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
Marinate chicken thighs in the mixture for 1-8 hours in the fridge.
Preheat oven to 350°F (180°C). Place chicken in a baking dish and pour remaining marinade on top.
Bake for 40-45 minutes until fully cooked and skin is crispy. Baste occasionally and broil last 2-3 minutes for extra crisp.
Garnish with lemon slices if desired before serving.
Notes
For extra flavor, marinate longer and serve with fresh lemon slices.
