Ingredients

olive oil

  • 2 tbsp olive oil

vegetables

  • 1 onion onion (diced)
  • 2 carrots carrots (sliced rounds)
  • 2 stalks celery (chopped)

garlic

  • 3 cloves garlic (minced)

broth

  • 8 cups chicken broth (low sodium)

pasta

  • 1 cup orzo pasta (uncooked)

chicken

  • 2 cups cooked chicken (shredded)

eggs and lemon

  • 3 large eggs (room temperature)
  • 0.5 cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 0.33 cup fresh dill (chopped)

Instructions 

  • Heat olive oil and sauté vegetables until softened (5-7 mins).
  • Add garlic and cook for 1 minute.
  • Pour in broth, bring to boil, then simmer.
  • Stir in orzo and cook until al dente (8-10 mins).
  • Lower heat, add shredded chicken, then whisk eggs with lemon juice. Temper eggs with hot broth, then stir back into soup. Cook 3-5 mins, then add lemon zest and dill.

Notes

Use fresh lemon juice for the best flavor and ensure eggs are at room temperature to prevent curdling.
