A healthy and delicious baked treat combining Greek yogurt and berries, perfect for breakfast or a snack.

Ingredients

Dairy

  • 2 cups Greek yogurt
  • 4 large eggs eggs
  • 4 tbsp sweetener (erythritol, monk fruit, honey, maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)

Fruits

  • 1.5 cups blueberries (fresh or frozen)
  • 1 tsp lemon zest (optional)

Instructions 

  • Preheat oven to 350°F / 175°C and prepare baking dish.
  • Mix Greek yogurt, eggs, sweetener, vanilla, and lemon zest until smooth.
  • Add cornstarch and whisk until batter is thickened.
  • Gently fold in blueberries and pour batter into dish.
  • Bake for 35-40 minutes until set and golden. Cool slightly before serving.

Notes

You can top with extra berries or a dusting of sweetener for added flavor.
