A healthy and creamy chicken salad made with Greek yogurt, fresh veggies, and grapes, perfect for quick lunches or light dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup plain Greek yogurt
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup grapes, halved
  • 1 tablespoon lemon juice
  • to taste salt and pepper

Instructions 

  • Shred the cooked chicken and prepare the veggies by dicing celery and red onion, and halving grapes.
  • In a large bowl, combine shredded chicken with Greek yogurt, then add diced celery, red onion, and grapes.
  • Stir in lemon juice and season with salt and pepper to taste.
  • Chill in the fridge for at least 10 minutes to meld flavors.
  • Serve immediately or store for later, perfect for sandwiches or salads.
