A flavorful and fresh sandwich combining grilled chicken, crisp apples, and aromatic sage pesto, perfect for a satisfying lunch or dinner.

Ingredients

Sage Pesto

  • 3/4 cup fresh sage leaves (lightly packed)
  • 3/4 cup pine nuts or walnuts
  • 1/4 cup fresh Italian parsley leaves (packed)
  • 1 clove garlic
  • ¾ cup olive oil
  • 6 tablespoons freshly grated Parmesan cheese

Chicken

  • 6 pieces skinless, boneless chicken breast halves

Bread

  • 6 rolls rectangular rolls (focaccia, ciabatta or French rolls, split horizontally)
  • to taste Mayonnaise
  • 3 medium apples (halved, cored and thinly sliced)

Instructions 

  • Add sage, nuts, parsley, and garlic to a food processor and process until finely chopped.
  • With machine running, add ¾ cup oil and blend into a paste; mix in cheese and season with salt and pepper.
  • Pound chicken breasts to ½-inch thickness, brush with oil, season, and grill until cooked through.
  • Grill rolls until lightly browned, then assemble sandwiches with mayonnaise, apples, chicken, and pesto.
  • Spread pesto on roll tops, place on sandwiches, and serve.

Notes

For extra flavor, let the pesto sit for 30 minutes before serving.
