Instructions
Add sage, nuts, parsley, and garlic to a food processor and process until finely chopped.
With machine running, add ¾ cup oil and blend into a paste; mix in cheese and season with salt and pepper.
Pound chicken breasts to ½-inch thickness, brush with oil, season, and grill until cooked through.
Grill rolls until lightly browned, then assemble sandwiches with mayonnaise, apples, chicken, and pesto.
Spread pesto on roll tops, place on sandwiches, and serve.
Notes
For extra flavor, let the pesto sit for 30 minutes before serving.
