Instructions
Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make marinade.
Toss chicken cubes in marinade, cover, and refrigerate for 30 minutes.
Preheat grill to medium-high heat.
Thread chicken and vegetables onto skewers in a colorful pattern.
Grill skewers for 10–12 minutes, turning occasionally, until cooked and slightly charred.
Let rest 2 minutes, then serve warm.
Notes
Soak wooden skewers in water for at least 30 minutes to prevent burning.
