Ingredients

Protein

  • 500 g boneless, skinless chicken breast or thighs, cut into 1-inch cubes

Vegetables

  • 1 red bell pepper red bell pepper, cut into chunks
  • 1 yellow bell pepper yellow bell pepper, cut into chunks
  • 1 small zucchini small zucchini, sliced into thick rounds
  • 1 red onion red onion, cut into chunks
  • 1 cup mushrooms, whole or halved

Marinade

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice (about ½ a lemon)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika

Skewers

  • 1 set Metal or soaked wooden skewers

Instructions 

  • Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make marinade.
  • Toss chicken cubes in marinade, cover, and refrigerate for 30 minutes.
  • Preheat grill to medium-high heat.
  • Thread chicken and vegetables onto skewers in a colorful pattern.
  • Grill skewers for 10–12 minutes, turning occasionally, until cooked and slightly charred.
  • Let rest 2 minutes, then serve warm.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning.
