Ingredients

Protein

  • 1.5 lb boneless, skinless chicken breast (cut into 1.5-inch cubes)

Vegetables

  • 1 large red bell pepper (cut into chunks)

Oils & Liquids

  • 2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice

Spices & Seasonings

  • 1 Tbsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp granulated chicken bouillon
  • 0.75 tsp sea salt
  • 0.25 tsp freshly ground black pepper

Additional

  • lemon wedges lemon wedges (for serving)
  • 1 package wooden skewers

Instructions 

  • Soak skewers in water for 20-30 minutes.
  • Preheat grill to medium-high (about 400°F).
  • Mix olive oil, lemon juice, paprika, garlic, onion, bouillon, salt, and pepper.
  • Toss chicken and peppers in marinade, refrigerate 20 min to 4 hrs.
  • Thread chicken and peppers onto skewers, then grill 10-12 mins until cooked and charred.
  • Serve with lemon wedges after resting a few minutes.

Ensure chicken reaches 165°F for safety.
