Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 0.33 cup honey (local honey recommended)
  • 0.25 cup fresh lime juice (about 2-3 limes)
  • 2 tablespoons chili powder (adjust to taste for heat level)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.25 cup fresh cilantro (chopped, optional for serving)

Instructions 

  • Whisk honey, lime juice, chili powder, garlic, olive oil, and salt until smooth.
  • Marinate chicken in the mixture for at least 30 minutes in the refrigerator.
  • Preheat grill to medium-high (375°F-400°F).
  • Grill chicken 6-7 minutes per side until cooked through and juices run clear.
  • Rest chicken for 5 minutes, then garnish with cilantro and serve.
