Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts (pounded to even thickness)
  • 3 tablespoons olive oil (extra virgin preferred for best flavor)
  • 1 unit lemon (juice of 1 lemon)
  • 1 tablespoon lemon zest
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh oregano (finely chopped or 1 tsp dried)
  • 1 teaspoon smoked paprika
  • to taste none salt and black pepper (for seasoning)

Optional Garnish

  • to taste none chopped sun-dried tomatoes, shaved Parmesan, or fresh parsley (for garnish)

Instructions 

  • Combine lemon juice, lemon zest, garlic, herbs, paprika, salt, and pepper; marinate chicken for at least 30 minutes.
  • Preheat grill to medium-high heat.
  • Grill chicken for 6-8 minutes per side until cooked through.
  • Remove from grill and let rest for a few minutes before serving.
  • Garnish with optional toppings and serve hot.

Notes

Marinate the chicken for at least 30 minutes for maximum flavor.
