Instructions
Peel and chop the onion and garlic.
Cook onion and garlic in oil until soft, then add beef and brown.
Add rice, beans, carrots, sweetcorn, broth, and simmer for 10 minutes.
Add broccoli and cook until liquid is absorbed.
Transfer to a dish, top with cheese and tomatoes, then bake at 180°C for 15 minutes.
Garnish with chopped parsley before serving.
Notes
Feel free to add more vegetables or cheese for extra flavor.
