A hearty and flavorful casserole combining ground beef, rice, vegetables, and cheese, baked to perfection for a satisfying meal.

Ingredients

Meat and Vegetables

  • 750 g ground beef (beef mince)
  • 1 large onion
  • 3 cloves garlic
  • 2 carrots carrots
  • 0.5 cup sweetcorn
  • 0.5 cup cooked black beans
  • 1 cup broccoli florets
  • 4 cups beef stock (broth)
  • 0.5 cup grated cheddar cheese
  • 1 cup chopped fresh tomatoes
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp vegetable oil
  • 0.5 cup rice

Instructions 

  • Peel and chop the onion and garlic.
  • Cook onion and garlic in oil until soft, then add beef and brown.
  • Add rice, beans, carrots, sweetcorn, broth, and simmer for 10 minutes.
  • Add broccoli and cook until liquid is absorbed.
  • Transfer to a dish, top with cheese and tomatoes, then bake at 180°C for 15 minutes.
  • Garnish with chopped parsley before serving.

Notes

Feel free to add more vegetables or cheese for extra flavor.
