A delicious and easy-to-make casserole combining seasoned ground beef, enchilada sauce, and cheese, baked to perfection.

Ingredients

Meat

  • 1 lb ground beef (Use lean ground beef for better texture.)

Sauces and Condiments

  • 1 can enchilada sauce (Choose mild or hot, based on preference.)
  • 1 cup salsa (Chunkier salsa adds texture.)

Cheese

  • 2 cups shredded cheddar cheese (Freshly shredded melts better.)

Bread and Tortillas

  • 6 pieces flour tortillas (Warm slightly to prevent tearing.)

Vegetables

  • 1 can corn (Drain well to avoid soggy layers.)

Seasonings

  • to taste salt and pepper (Adjust at the end of cooking.)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef in a skillet until browned; season with salt and pepper.
  • Layer tortillas in a baking dish, then spread beef, enchilada sauce, salsa, corn, and cheese between layers.
  • Top with remaining cheese and bake for 20-25 minutes until bubbly and golden.
  • Let rest for 5 minutes before serving.

Notes

For a spicier version, add hot sauce or jalapeños.
