Ingredients

Seasoning

  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 1.5 teaspoons paprika
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 pound ground beef
  • 2 teaspoons soy sauce (or coconut aminos)
  • juice 1 small lime lime juice
  • ¼ cup water
  • ¼ cup cilantro (chopped)
  • 2 bell peppers bell peppers (thinly sliced)
  • 1 small onion (thinly sliced)
  • 1 tablespoon avocado oil
  • 2 teaspoons soy sauce (or coconut aminos)
  • juice 1 small lime lime juice
  • 2 cups cooked white rice (or cilantro lime rice)
  • ¼ cup sour cream

Instructions 

  • Mix fajita seasonings and set aside.
  • Cook ground beef with half of the seasoning until browned, then add water, soy sauce, lime juice, and simmer for 5 minutes. Stir in cilantro.
  • Sauté sliced peppers and onions with remaining seasoning, soy sauce, and lime juice until tender.
  • Serve beef and vegetables over rice, topped with sour cream and lime wedges.

Notes

You can customize the toppings with avocado or cheese for extra flavor.
